The climate impact of the commercial baking sector
The commercial baking sector is made up of approximately 7 medium to large sized bakeries across the country.
Energy emissions across the sector are estimated at more than 30,000T CO2e per year, which is equivalent to the annual emissions of 11 thousand cars.
Use of natural gas
The sector uses high amounts of natural gas across a range of areas in the baking process – primarily for direct-fire ovens. Gas is also used to fuel boilers to produce steam for processes such as proofing, or for heating water for the cleaning and sterilisation of equipment, such as crates and mixers.
This pathway focuses on reducing energy-related carbon emissions from commercial baking, which ultimately means reducing the use of fossil fuels across the baking process.
